Ingredients

  • 1 1/3 cups all-purpose flour 1 stick (8 ounces) cold butter or 4 ounces butter and 4 ounces lard 1 teaspoon salt (less if you use salted butter) 1 tablespoon sugar (optional) 1/4 cup ice water

Directions

Use steel blade of food processor. Put into work bowl all ingredients except ice water first cutting butter into several small pieces. Process until the mixture has the consistency of coarse meal (5 to 10 seconds). With machine running, pour ice water through feed tube in a steady stream. Stop processing as soon as dough forms a ball to insure tender, flaky pastry. May be used instantly or freezes well.

Yield: Two 8-inch pie crusts
